Fresh eggs make everything better, including pancakes. And my batter recipe isn't much more difficult to mix up than the boxed mixes.
My favorite pancake recipe uses vanilla to give the pancakes a yummy, comforting flavor.
They're so easy to make and use just a few basic ingredients you likely already have on hand, so why not whip up a batch this weekend?
Fluffy Vanilla Pancakes
Makes six large 5"- 6" pancakes.2 cups flour
4 teaspoons baking powder
2 Tablespoons granulated sugar
1 teaspoon salt
2 fresh eggs
1 1/2 cups milk
1 teaspoon vanilla bean paste or two vanilla beans, scraped
4 Tablespoons butter, melted
Whisk the flour, baking powder, sugar and salt in a large bowl.
In a small bowl, whisk the eggs, milk, vanilla and melted butter, then slowly add the liquid to the dry ingredients, whisking until just combined.
Using a ladle, pour the batter, one-sixth at a time, onto a medium-hot greased griddle or skillet.
Cook each pancake until bubbles form on the top around the edges.
Peek underneath to see if the bottom is golden brown and once it is, flip the pancake and cook for a few more minutes until the second side is golden.
Use a spatula to transfer pancakes to plates and serve with butter, syrup, powdered sugar, cinnamon, fresh berries or fruit jam.
