Chewy on the inside, crispy on the outside, and brimming with delicious vanilla and almond flavors, these festive cookies are perfect for a birthday celebration.

Today is my husband's birthday. And statistically, 8.33% of you who are reading this also have a birthday this month. So I thought to "celebrate", I would share this fun cookie recipe. 

And if it's not your birthday this month, or the birthday of someone you know, it's easy enough to bookmark or pin the recipe for later.

Who says birthdays are only about cake? 

These cookies are fancy enough to stand alone and be the main attraction at a birthday, retirement or other celebration, or they can be served alongside a traditional birthday cake. 

These Fun Confetti Birthday Cookies are chewy on the inside, crispy on the outside, and brimming with delicious almond and vanilla flavors to mimic a typical birthday day. 

The beaten egg whites make them light and airy, and there's a hint of lime for a pop of tartness.

And for even more fun, these adorable cookies are packed with a colorful surprise inside, making them super festive and perfect for a special birthday celebration.

They also travel far better than a cake would, so package some up and ship or deliver them to a friend or neighbor with something to celebrate.

Fun Confetti Birthday Cookies

Makes 18 cookies.

2 1/4 cups almond flour
1 cup granulated sugar
1/8 teaspoon salt
2 egg whites
1/2 teaspoon lime juice
1/2 teaspoon vanilla bean paste (love this brand!)
1/4 teaspoon almond extract
1/4 cup sprinkles or non pareils (this is what I used)
1/4 cup confectioners sugar

Preheat the oven to 300 degrees with the rack in the middle of the oven. Line a baking sheet with parchment paper.

In a medium bowl, whisk the flour, sugar and salt.

In the bowl of a stand mixer fitted with the whisk attachment, beat the egg whites and lime juice until soft peaks form. 

Whisk in the vanilla and almond extract, then with the mixer on low speed, slowly add in the flour mixture and continue to whisk until the dough forms a sticky ball and the ingredients are all incorporated. 

Whisk in the sprinkles.

Sift the confectioners sugar onto a plate.

Using a small ice cream scoop, scoop out the dough into 1” balls and roll them in the confectioners sugar. Set the balls on the prepared baking sheet, spacing them 1” apart.

Bake the cookies for 30 to 32 minutes, until the cookies are puffy and the tops crack. The bottoms should be just barely browned.

Remove the cookies from the oven and cool for 5 minutes then remove to a wire rack to cool completely. 

Store leftovers at room temperature in a covered container.
