Fresh mint and cream of coconut make this refreshing summer sipper a cool winner.

I love making mojitos in the summer when we are overflowing with fresh mint in the garden. 

And when I have some cream of coconut on hand, I'll add that to the cocktails too for a more tropical vibe. 

I first had this cocktail at our favorite sushi restaurant and decided to create my own version so we don't have to go out for sushi any time I'm in the mood for a coconut mojito! (Although you hardly have to twist my arm to get me to go for sushi!)

Anyway, I usually just use white rum in these drinks, but if you have some coconut rum, that's good in them, as is lime rum. 

From the lime zest sugared rim to the refreshing notes of mint to the creaminess of the coconut, this cocktail should be on repeat for all your happy hours.

Coconut Cream Mint Mojito

Makes 2 cocktails.

1/2 lime, zested, then cut into wedges, plus additional wedges for garnish

One teaspoon sugar

Pinch of salt

2 or 3 sprigs fresh mint leaves, leaves removed from the stalks and ripped with fingers, plus more for garnish

4 ounces white rum

4 ounces cream of coconut

9 ounces lemon lime soda to top off glasses


In a small dish or shallow bowl, muddle the lime zest, sugar and pinch of salt until combined. Run one of the lime wedges around the rims of the glasses, then roll the rims in the lime sugar.

Add ice to the glasses.

Add the mint leaves and lime wedges to a cocktail shaker. Muddle well to release the juice and mint oils, then add the rum, cream of coconut, and a few ice cubes. Shake well until chilled, then strain into the glasses. 

Fill to the top with the soda and garnish with lime wedges and additional mint leaves.
