This classic cocktail recipe is a variation on a traditional whiskey sour. It's a great winter cocktail because it combines the warm rich notes of ginger and honey with bright citrus notes.
With a healthy dose of whiskey as well!
The Penicillin is a fairly "young" cocktail, compared to others that have been around for decades or even centuries. It was invented in 2005 by Sam Ross in NYC's Milk & Honey Bar, and supposedly inspired by The Rusty Nail cocktail.
The base of this now-popular drink consists of a honey ginger simple syrup, freshly squeezed lemon juice, and whiskey. Then it's topped with a splash of Scotch, a squirt of lemon oil, and a candied ginger garnish.
If you don't have any Scotch, or don't like it, you can add a bourbon/whiskey topper instead. And save the extra honey ginger simple syrup. It's delicious in any cocktail that calls for simple syrup.

Classic Whiskey Penicillin Cocktail
Makes 1 cocktail.
1 ounce honey ginger simple syrup
1 ounce lemon juice
2 ounces whiskey or bourbon
1/2 ounce Scotch or whiskey
Lemon peel, for garnish
Candied ginger, for garnish
Add the simple syrup, lemon juice, and whiskey to a shaker with ice. Shake until chilled, about 30 seconds.
Strain into a glass filled with ice. Top with the Scotch, then squeeze some lemon oil into the glass, and garnish with a piece of candied ginger.
To make the Honey Ginger Simple Syrup
Makes about 1 cup.
1/2 cup honey
1/2 cup water
5 or 6 slices of fresh ginger
Add the honey, water and ginger to a small saucepan. Bring to a boil, then remove from the heat. Let cool to room temperature, then strain and refrigerate until ready to use.
